Gluten free biscuits!

Easy gluten free, vegan biscuits
I’m not allergic to gluten, but if I eat gluten every day, I feel sick. So I often opt for gluten-free products and after a few tries, I’ve come up with this no-fuss recipe for gluten free biscuits. And while we’re here, why not making it even vegan? Try it. They’re good!
300g of self-rising, gluten free flour
150g of dairy free margarine (I use canola oil margarine)
150g of sugar (I use coconut sugar because it has a lovely nutty flavour)
100g of dairy free chocolate (yep, dairy free! It’s made with coconut oil, cocoa powder, and golden syrup. You can make it as well.)
50g of sliced almonds (or any other nut you like. You can add more than 50g.)
4 tablespoons of cocoa powder (or more, it depends on your taste)
1 teaspoon of vanilla essence
2 tablespoons of water (or orange juice if you prefer to add more flavour)

Mix everything in a glass bowl aside from the almonds. Put it into the microwave for a minute or two until the margarine and the chocolate are melted. 

Knead well with a fork first, (or you’ll get burned), add the almonds, then work with your hands until the ingredients are well mixed and form a non-sticky dough. 

You can’t really roll it though. So prepare small balls of dough, press them on a baking tray, and bake them at 180 C (static oven) for 10 mins.   

Let them cool, and enjoy!

Variations: you can discard the cocoa powder and chocolate and use pine seeds and sultanas, or add anything else you prefer, walnuts, raisins, pistachios…
