Pumpkin agrodolce
I love pumpkin. It’s versatile and delicious. You can prepare almost everything with pumpkin, from puddings, to risotto, and salads.I was lucky enough to live in Portugal for a while, and they cook many dishes with pumpink. I loved the Filhoses de Abóbora!
This is a quick and easy recipe to cook pumpkin in a different way.
Pumpkin 300 g
Olive oil
Balsamic vinegar
Salt, pepper

Cut the pumpkin into slices about 5mm wide, put the slices on a baking tray and roast them in the oven for 10-15 mins or until tender.

In a pan,  add oil, salt, pepper, garlic, and leek (the last one finely chopped), and cook gently until the garlic and leek are golden brown.
Add the pumpkin and let it cook for 2-3 minutes, then add the vinegar (2-3 tablespoons), raise the heat, and let the vinegar evaporate for a while. Turn off the heat and let the pumpkin cool for 20 minutes before eat.
Variations: you can try the same recipe with potatoes or add pine seeds or roasted almonds at the end.
