Author Heidi J. Hewett (author of the lovely sci-fi romance Lexi)  shared a lovely recipe. It sounds delicious!  

My favorite go-to recipe right now is what’s called The Buddha Bowl. There are lots of variations, and one of the things I like about it is so many different vegetables work, so it’s really whatever you have on hand.

Each bowl gets ½-1 cup cooked brown rice as the base
I add sweet potatoes or carrots, roasted in a 400 degree oven
I’ll usually throw in a can of chickpeas, sometimes I toast them first for 5-10 minutes, you can season them beforehand with a little salt and pepper, curry powder, paprika, anything you like.
The last 5 minutes of cooking time I lightly toast chopped kale.

Then you add the sauce, which I make to taste, starting with ¼ c of tahini or peanut butter, adding a splash of orange juice (or lime, or lemon), honey or maple syrup, hot water if you want to thin it.

At the end, you can toss in green or Kalamata olives—it sounds strange, but it works!—pepitas or sesame seeds or nuts and enjoy!
